Buffalo Chicken Wraps


I made these yummy wraps for dinner last night! They were a hit!

Buffalo Chicken Wraps

-1 lb chicken, cut in chunks
-1 cup orange bottled wing sauce
-Cooked White Rice
-Tortilla Wraps (I used Mission brand Wraps, jalapeno flavor)
-1 can black beans
-shredded lettuce
-blue cheese or ranch salad dressing


*Place cut up chicken in crock pot with wing sauce on low for 2-4 hours.
Place chicken, rice, beans, lettuce, and dressing in wrap (amount to your liking)... Roll up and eat!
Yum!
Also good with blue cheese chunks!

Cafe Rio

I think I found this recipe on another blog somewhere. I made it a few weeks ago and it was really tasty. I don't think the dressing tasted like Cafe Rio's, but it was tasty. The tortillas were really good though. You can use any of these recipes to make Tacos, salads or whatever you want.

Cafe Rio Creamy Tomatillo Dressing
1 package Hidden Valley Ranch
1 cup mayo
1 cup cilantro, chopped
2 cloves garlic, chopped
3 tomatillos - peel off paper, chop
1/3 - 1/2 cups buttermilk, to consistency you want
1/4 tsp. cayenne pepper (optional)

Put in blender and mix.


Shredded Cafe Rio Pork
3 lbs pork
16 oz. bottle of chunky salsa (blended in blender so chunks are gone)
1 can coke
2 cups brown sugar

Place pork in crock pot and fill it 1/2 way up the pork with water. Cook on High for 5 hours. Drain off water. Cut pork in thirds. Mix together sauce ingredients and put on top of pork. Cook an additional 3 hours on high. Shred pork with forks. Leave it on low until ready to serve.


Homemade tortillas
3 C. flour
1/2 C. veggie or olive oil
1 1/8 C. luke warm water
1 tsp. salt
1/2 tsp. baking powder

Mix all ingredients and knead. If too hard to knead, add a little water but if too sticky add a little more flour. Let stand for about 10 minutes. Makes about 12 small balls. Flatten each by rolling them out and then cook them in a frying pan.**I usually have 2 frying pans going at once so they all get cooked faster

Cafe Rio Rice
3 c water
4 t chicken bouillon
4 t garlic –minced
½ bunch cilantro
1 can green chiles—or equivalent fresh
¾ t salt
1 T butter
½ onion
3 c rice (see note)

Blend cilantro, green chiles and onion together in food processor. Bring water to a boil and add all ingredients, simmer covered 30 minutes.

Pineapple Fajitas

I have been making these about once a week lately! They are so easy, you can just throw it all together last minute! This is a made up recipe, so there aren't exact proportions, it usually just depends on how many you want to make it for.



Ingredients:

Red, yellow and orange peppers

1 can pineapple chunks

purple onion

tortillas (I prefer the ones that you cook yourself from Costco)

rice, cooked

sour cream

KC Masterpiece Fajita Marinade

few breasts of chicken



I like to buy the bag of colored peppers from Costco, cut them all in strips and freeze what I don't use.

Combine peppers, purple onion, and can of pineapple WITH juice in a large skillet. Cook until peppers are hot and tender but not too flimsy.

Shred cooked chicken (I will either boil chicken or buy a cooked chicken at Costco if I am real lazy) and apply the marinade until all the chicken is covered.

Cook rice.

Cook Tortillas.



Serve tortillas with a combination of rice, peppers mix, marinaded chicken, and sour cream.

They are light and YUMMY! Perfect for summer!

Steak Kabobs

So I made these last night for a delayed mothers day dinner for my mother-in-law. It really turned out yummy considering I started dinner at 6 (I fell asleep on the couch with my baby earlier when I was suppose to be cooking) and they all showed up at 7.


But, I was surprised how fun and easy these kabobs were!
Here's the recipe for the steak kabobs, I made chicken too, but I kind of made up that recipe and can't really remember it...: (Marinade overnight if possible, or if you were me 20 minutes since I was last minute.. but they still turned out yummy!)
Steak Kabobs-
1/4 cup wine vinegar
1/2 cup vegetable oil
1/4 cup ketchup
2 tbs A-1 Steak Sauce
1 teaspoon salt
1/2 teaspoon oregano
1/4 teaspoon black pepper
2 tablespoons Worcestershire sauce
1/2 cup chopped onions
2 cloves minced garlic
3 lbs sirloin steaks, cut into 1 inch cubes
green peppers, cut into squares
red peppers, cut into squares
1 onion cut into squares
mushrooms (I used baby bella mushrooms, yummy)
Mangos, cut into cubes
Pinapple chunks
Cherry Tomatoes
and.. Whatever else you like!
Stick them on a skewer (soak wood ones in water for a few hours to avoid burning)
Then cook to your liking.
- Can cook onions and green peppers before so they are soft, (blanche/boil them in water for a bit)

FRUIT DIP!!

Great dip for Some summer Festivities!! Super Easy and Everyone LOVES IT!

2 pkgs cream cheese-Softened

Whip & Mix with:
1 c. brown sugar
1 small pkg white chocolate pudding mix
16 oz. vanilla yogurt

Serve with Fruit, Best choice...Strawberries & Fuji apples
Enjoy!

Orange Tapioca Salad

1 box. orange jello (small)
1 box vanilla pudding (not instant) (small)
1 box tapioca pudding(not instant) (small)
1 Lrg. can of mandarin oranges, drained.
1 med. can of crushed pineapple, not drained.
1 C. mini m-mallows (opt.)
1/2 tub Cool Whip
2 C. H2O

In a Large pan, put the 2 cups of water, vanilla and tapioca pudding together. Stirring constantly, let it get real thick. Take off the heat and add the orange jello, m-mallows, cool whip, oranges and pineapple. Stir all together and put in a bowl and set it in the refridgerator until it sets up. This is so delicious.

Incredible Brocolli Slaw

1 bag of Brocolli Slaw
1 pack of chicken flavored ramen noodles, crunched up
1 c. sliced almonds
1 c. sunflower seeds
1/2 c. of white raisins, optional

Mix all above together.
In a small mixing bowl, mix together:

1/4 c. veg. oil
3 TBSP. sugar
3 TBSP. apple cider vinegar
chicken flavoring from the ramen noodles

Add to the dry ingredients and let it sit all day to marinade. This is soooo darn good and my kids love it, too. ENJOY!

Chicken Pot Pie

This recipe is from my friend Katy and is super EASY and yummy too!

1 can Cream of Chicken Soup
1 can Cream of Mushroom Soup
16 oz. Frozen Vegetables (I use way less because we don't like veggies! :) )
2 Chicken Breasts (I shred them, or you can cube them, whatever)
Pie Crust (2) Deep Dish
1 cup Shredded Cheese

Combine Soups, Vegetables, and Chicken. Pour into the pieshell. Top with cheese. Cover with pie shell and seal edges.

Bake 350 degrees for 50-60 min. (You can pre-make and freeze and bake for 1-1.5 hours)

Not your mama's Coleslaw

Coleslaw Salad Recipe

I'm actually not too fond of Coleslaw, but this is a yummy recipe.
I actually got it from my friend Kari Ann.

1 head Cabbage
3/4-1 cup Original Crasins(dried cranberries)
3/4-1cup Candied Slivered Almonds

Dressing:
3/4 cup Mayo
1/3-1/2 cup Sugar
1 Tsp Lemon juice
1 Tsp Bon Appetite Seasoning Salt (McCormick brand) *Find it in the Spice isle. Not all stores have it, I found mine at Smiths.

Add more sugar, lemon juice and/or seasoning to your taste. Dressing can be made ahead of time.
Mix everything together just before serving.

*Caramelize 4 tablespoons of sugar and almonds in a sauce pan on medium-low heat. Once the sugar has melted, spread almonds onto wax paper. Allow almonds to cool complete before adding them to the coleslaw.
