Lasagna A La Mexicana

1 pkg of extra wide cooked lasagna noodles or any type of noodle works- I like shells
1lb of lean ground beef
1/2 c chopped onion
1/2c chopped green pepper
2 12 oz jars of salsa (2 1/2 cups)
1 can of whole kernel corn-drained
1 tsp. chili powder
1 c of ricotta cheese (you can use the non-fat)
2 c of shredded cheddar cheese
one small can of sliced black olives
sour cream to top it off

Preheat oven 375
prepare noodles
brown meat, onion and green peppers- drain
return to pan- add salsa, corn, and chili powder
in a 13X9 baking dish- layer meat sauce, noodles, ricotta cheese and cheddar cheese combined-then repeat layers ending with sauce. Sprinkle with olives and remaining cheddar cheese-cover with foil. Bake for 30 minutes. Let stand for 10 minutes before serving- and then serve with sour cream! Enjoy- this is really yummy!!!

I made this last night and Chris loved it. Thanks for a great idea. And it was pretty easy to make which is always a plus.
