Pineapple Fajitas

I have been making these about once a week lately! They are so easy, you can just throw it all together last minute! This is a made up recipe, so there aren't exact proportions, it usually just depends on how many you want to make it for.

Ingredients:

Red, yellow and orange peppers

1 can pineapple chunks

purple onion

tortillas (I prefer the ones that you cook yourself from Costco)

rice, cooked

sour cream

KC Masterpiece Fajita Marinade

few breasts of chicken

I like to buy the bag of colored peppers from Costco, cut them all in strips and freeze what I don't use.

Combine peppers, purple onion, and can of pineapple WITH juice in a large skillet. Cook until peppers are hot and tender but not too flimsy.

Shred cooked chicken (I will either boil chicken or buy a cooked chicken at Costco if I am real lazy) and apply the marinade until all the chicken is covered.

Cook rice.

Cook Tortillas.

Serve tortillas with a combination of rice, peppers mix, marinaded chicken, and sour cream.

They are light and YUMMY! Perfect for summer!

I tried e-mailing but couldn't get through...
Anyway, I am always on the look-out for good recipe blogs and came across this one kind of by accident, but it's great! So great I have added it as a link to my recipe blog. Feel free to check it out sometime. Thanks for letting me stop by!
