POPOVERS

These are the best! We had them yesterday and it reminded me of how good they are. They are like an airy, roll and slather them with butter and they're perfect.


1 egg
2 egg whites
1 C. milk
1 T. cooking oil
1 C. flour
¼ tsp. salt

Spray a popover pan(or muffin tin) with nonstick cooking spray. Beat egg and egg whites together. Beat in milk and oil. Add flour and salt, beat until blended but still lumpy.

Fill cups half full(this is important!). Bake @ 400 until firm, about 30-35 minutes. Turn off oven, prick popovers with a fork. Leave in oven for 5-10 minutes or until crispy. Serve warm.
Makes 6.

yes, they'd be really good with some honey or jam spread on top!
